The main component in casseroles is cottage cheese. It can be homemade, store-bought or farmer’s cottage cheese – any of them will do. It is better not to use an expensive granulated ingredient – it has too dense a consistency and requires a lot of fiddling.

The fat content is not particularly important. Those who like muffins choose more fatty varieties, adherents of a healthy diet – lean. It is important that it should be fresh enough, not sour, rancid and, in no case, moldy.

For lighter versions, it is replaced with fresh kefir, sourdough or yogurt.

The bananas also have a lot to do with it. Dark, overripe bananas give baked goods more sweetness, greenish bananas give them a certain tartness and a firmer consistency.

Cookware. The best option is non-stick coated cookware. It is easier to keep the shape of the product and there will be no problems with extraction. When using glass or simple metal devices, it is desirable to cover them with special baking paper heavily greased with something greasy.

The aroma and flavor of this dessert with sour cream is familiar to everyone from early childhood. It will be a joy for a one-year-old child, and adults will be reminded of their happy “kindergarten” and school years.

Ingredients

  • Medium-fat cottage cheese – 0.5 kilograms;

  • Sour cream 20% – 1 cup;

  • Semolina – 100 grams;

  • Granulated sugar – 5 tablespoons;

  • Egg – 3 pieces;

  • Seedless raisins – 150 grams;

  • Bananas – 1 fruit;

  • Baking soda with vinegar – ½ teaspoon;

  • Butter – 10 grams;

  • Salt, a pinch.

Steps

  • Inspect the raisins, remove any damaged berries, debris and tails. Fill with plenty of cold water and rinse well. Leave alone so that dust and sand have time to settle to the bottom. Transfer the berries to another bowl and soak them again with water.
  • Fill a suitable bowl with cottage cheese, sour cream, cereal, extinguished soda, eggs beaten with sugar, drained raisins, salt. Carefully mix with banana cubes.
  • Rub the bottom and sides of the mold with a piece of butter, spread the prepared mixture. Put in a preheated oven at about 180° for 40-50 minutes. Check the readiness of the dough on a toothpick.
  • Leave in the mold covered with a towel until cool. Cut into portions, arrange on plates.

Note

  • As an addition and decoration to the casserole you can offer fruit or berry jam, jelly or syrups. Drink it with hot tea or coffee. Boiled milk, cocoa or compotes are often served on the table set for children.

Simple casserole with banana on kefir with semolina

To save time, we will cook it in a frying pan. The sweetness will turn out to be dietary – not very sweet, the calorie content is not too high. To minimize it, you can prepare the mixture without sugar at all. Let’s gather according to the list:

  • Kefir 1% – 0.5 liters;
  • Large banana – 1 piece;
  • Chicken eggs – 1-2 pieces;
  • Semolina – ½ cup;
  • Sugar – 3 tablespoons;
  • Baking soda – ¼ teaspoon;
  • Vegetable oil – for greasing;
  • Salt to taste.

We’ll cook it like this:

  • In a deep bowl break the eggs, sprinkle with sugar and salt, beat with a whisk until frothy, bring the cereal together with baking soda, stir. Leave to stand for a few minutes to swell.
  • Put the skillet on the heat and brush a little oil on the bottom and sides. Cut the peeled fruit into thin rings and spread evenly over the hot surface.
  • Fill the slices with the prepared mixture and keep over low heat under a lid until the mixture thickens and browns around the edges.

Note. If time permits, the “pancake” can be flipped with two kitchen spatulas for a double crispy crust.

Holiday cottage cheese casserole with bananas

Guests are about to arrive and you have nothing to welcome them with dignity? With the help of this recipe, everything is fixable. While we wait – knead, during the exchange of courtesies – bake. Delight is assured. Let’s gather them on the kitchen table:

  • Fat cottage cheese – 360 grams;
  • Sugar – 60 grams;
  • Eggs – 3 pieces;
  • 80% butter – 45 grams;
  • Wheat flour – 30 grams;
  • Lemon zest – ½ teaspoon;
  • Yellow bananas – 2 pieces;
  • Nuts – 40 grams;
  • Breadcrumbs – as many as you need;
  • Table salt – ¼ teaspoon.

Witchcraft:

  • Separate the egg yolks into the bowl of a mixer and beat them together with the cottage cheese, sugar, salt, part of the butter, lemon zest and nut crumbs.
  • Whip the remaining whites into a fluffy foam and add to the main mixture. Grease the baking tray generously with butter and sprinkle with breadcrumbs.
  • Fill it halfway with dough, arrange the banana rings, cover with the rest of the dough, level the surface. Place the remaining piece of butter in the middle on top.
  • Keep in the oven at 200 degrees for about half an hour until light brown.

We offer the finished deliciousness hot whole, laid out on a wide flat dish and sprinkled with vanilla powdered sugar. Another option: cut the cooled pastry into flat slices and drizzle with thick citrus syrup or beautifully layered with whipped cream. The cut will be even, not coarse, as we cook without semolina.

Economical banana casserole.

If you have a handful of yesterday’s pasta in the fridge, it is quite acceptable to do without the usual semolina and flour. If desired, you can also make it without eggs and natural cottage cheese.

Attention! Pasta should be “naked”, i.e. without seasonings and spices, dressings and sauces.

Ingredients:

  • Sweet cottage cheese paste – 200 grams;
  • Egg – 1 piece;
  • Butter 82.2% – 10 grams;
  • Banana – 1 pc;
  • Boiled pasta – 150 grams.

Operating Procedures:

  • Heat the butter until soft in a heatproof glass bowl in the microwave. Knead the pasta in it and rub it in with the egg.
  • Cut the banana flesh arbitrarily, separate the sticky pasta (cut too long spaghetti into pieces). Sprinkle into a bowl and stir.
  • Put in the microwave for about 10-15 minutes. If it’s still a bit runny, extend the cooking time a bit.

The product turns out soft and tender, with thin crusts. The same effect can be achieved in the “Bake” mode of the multicooker.

Interesting. Banana palm fruits contain a lot of natural starch in their composition, so baked goods with them without flour at all do not fall apart. Gluten-free casseroles are made with rice flour.
